Why do we suggest sourdough beginners first use a known good starter?
I am reminded of Christopher Columbus who didn't know where he was going, didn't know where he was when he got there, and didn't really know where he'd been in between.
If you don't know what a good starter looks like, smells like, tastes like, or how it should work and handle, your chances of achieving a good one from scratch are fairly slim.
Using a known good starter eliminates a lot of variables and makes your learning curve far less steep, since we'll guide you through all the steps, from A-Z. Once you know what you are doing,
then by all means, have a go at trying to make your own starter.
