Chia, (Salvia hispanica L.) a member of the mint family is an ancient food of the Mayan, Aztec and Southwest Native American people and was a staple in their
diet along with corn, beans and amaranth.
Chia seeds were so valued that it was offered to their gods in ceremonies and was also used as currency. Roasted and ground, Chia sees were used to make the
staple flour, pinole. Native people have used Chia seeds for wounds, colds and sore throats, upset stomachs, body odors, prostate problems, and constipation.
Known as the “Running Food”, its use as a high-energy endurance food has been recorded as far back as the ancient Aztecs. It was said the Aztec warriors
survived on the Chia seed during the conquests. The Indians of the southwest would eat as little as a tablespoonful when going on a 24hour forced march.
