This is the culture Brett used when participating in the inaugural Australian Artisan Cup held in Melbourne, June 2007

In May 2008, Brett's second in charge [at the time], Brad Clapham claimed The Cup 2nd time in a row for Uncle Bob's Bakery! Well Done Guys!

Brett's Starter is classed and tested
as a true San Francisco Style Starter


Brett declined participation in 2009, as by then he became Captain of the Australian Team, competing in various prestigious International Baking Competitions.
Currently Brett is mentoring Bakers and is a judge in national and international competitions.

Brett  not only is an extremely knowledgeable all-round Baker, but is also fired with a consummate passion for "True" Sourdough and "Old Style" breads. 

Brett decided to make this Culture available, so Any sourdough baker can now work with a culture that can produce bread that has the potential to be the best!

Not only does Brett's culture come with a high degree of pedigree,

Brett includes some special instructions, to ensure it will perform for you, the HomeBaker, every time!

Ideally suited for White Sourdough Bread, it can easily be trained on Wholemeal and/or Rye.

Brett's Starter is supplied from continuously fed working stock (leaven) that is used in his bakery on a daily basis, is pre-activated and supplied in a sealed pouch. It is semi-hydrated, and can be posted safely nationwide and even internationally.

What this means is that you will be able to bake with this award winning culture within 48-72 hours! [or even sooner!]

Just released from Brett's Bakery - Uncle Bobs Bakery.
100% Rye Sourdough Bread is not everyone's cup of tea, but this culture will help you make 100% Rye Bread second to none you may find in Europe.  Follow the easy A-Z instructions and enjoy!
Rye bread is traditionally Quite dense, and actually gets even better in taste if you leave it for a day or so! [if you can!]

Brett's 100% Rye recipe calls for both rye flour and rye meal, which are also available from our shopping cart. Because Brett's recipe produces a fairly wet dough, it is best to proof/bake this in a tin, or use a proofing basket, or a lined S/S or ceramic bowl to proof your dough.
