It contains the bacteria Lactobacillus sanfrancisco and the wild yeast Candida humilis which produce that famous San Francisco sourdough
taste

This culture is used on a daily basis in Brett's Bakery, producing 100's of sourdoughs for both retail and wholesale (restaurant) customers every
week.
It is one of the cultures Brett used when participating in the inaugural Australian Artisan Cup in June 2007 held in
Melbourne.

Brett's Culture was most recently used during the 2008 Australian Artisan Baking Cup by Brad Clapham, Brett's 2nd in charge. Guess what...
Brett declined participation in 2009, as by then he became Captain of the Australian Team, competing in various prestigious
International Baking Competitions.
Currently Brett is mentoring Bakers and is a judge in national and international competitions.
